产品用途: 广泛用于乳品、食品、保健品、医药等行业中,具有广阔的市场前景。

 

酪蛋白是含磷钙的结合蛋白,pH较低时会沉淀。

酪蛋白为非结晶、非吸潮性物质,常温下在水中可溶解0.8-1.2,微溶于25水和有机溶剂,溶于稀碱和浓酸中,能吸收水分,当浸入水中则迅速膨胀,但分子不结合。

 

用途:增稠剂;乳化剂;稳定剂;营养强化剂(强化蛋白质);粘结剂;填充剂;载体。 尤其适用于干酪、冰淇淋,用量0.30.7、肉类制品(火腿、香肠)13及水产肉糜制品。强化面包、饼干的蛋白质5;蛋黄酱3。
